Red Mud BBQ Chicken Kabobs Ingredients

4 chicken breast filets
2 large pablano peppers
2 dozen cherry tomatoes
2 red onions
1 can pineapple slices
1/2 cup Red Mud BBQ Sauce

Preheat an outdoor gas or charcoal barbecue to a medium heat. Cut the chicken, onions, peppers and pineapple into 1 1/2 inch squares. Skewer the chicken, onions, peppers, cherry tomatoes and pineapple onto kabob skewers.

Using paper towels, put a small amount of olive oil on them and carefully and quickly wipe the hot grates of the grill to make it a nonstick surface. Place the kabob skewers onto the grill and cook until the chicken is done. Brush Red Mud BBQ Sauce onto the kabobs and turn every 90 seconds until sauce carmelizes.

Serves 6. Serve with a glass of Viviana from Llano Estacado Winery.
